A Soup For A Snowy Day





So today we finally got some snow! Luckily it wasn't too deep to get the children to school and they had a whale of a time on the way stomping out their footprints, throwing snowballs and generally getting very excited indeed.

As they were both at school today I had some time to do a bit of cooking and what better on a cold snowy day than a warming, hearty parsnip soup. Parsnips are cheap and plentiful at the moment so I decided on a creamy parsnip soup to keep away the winter chills.

Parsnip Soup Recipe

Ingredients

4-5 large parsnips
1 onion
butter
400 ml milk
400 ml vegetable stock
1/4 tsp paprika
1/4 tsp dried chillies

Dice the onion and fry in butter until translucent and starting to brown

Peel and dice the parsnips and add them to the onion along with the milk and vegetable stock. I like my soups spicy so I added in paprika and dried chillies but you don't have to use these!

Then simmer the soup for around 20 mins-30 mins until the parsnip is falling apart soft

Take the soup of the heat and blend until smooth and return to the heat for another 5 mins if you want to thicken it up a bit.
